Low in fat and high in protein, a revitalizing gift from the ocean
Carefully selected live abalone with tender, springy texture and natural sweetness. Low in fat and high in protein, it is rich in natural taurine, conchiolin, and essential minerals.
xBird’s chef uses a multi-stage, temperature-controlled extraction technique to create a blend of scallop, chicken, and fresh scallop juices. The abalone is first infused at a low temperature in this blend, then repeatedly drizzled on both sides with 110°C Italian avocado shrimp oil and Irish grass-fed butter, enveloping each piece in rich, layered aromas from land and sea.
Rice is prepared with A5 Wagyu cubes, white mushrooms, egg, and sweet corn, then mixed with the scallop juice, Hokkaido kelp broth, and slow-simmered Italian avocado anti-inflammatory shrimp oil. This brings out the natural umami of the abalone, the richness of the Wagyu, the earthy mushroom aroma, and a delicate sweetness.
The abalone is gently cooked at no more than 120°C, just until its aroma is released. Low in heatiness, light on the body, low in oil and salt, and free from MSG, it preserves the natural freshness, aroma, and nutrients of the ingredients.
